At Mimosa, Jean-François Piège revisits deviled eggs and explores Mediterranean delicacies
For his new address, Michelin-starred chef Jean-François Piège takes us to the south of France. There, he offers his version of the famous deviled eggs and other delicacies in a gourmet, sunny menu inspired by the Mediterranean Sea.

Hôtel de la Marine welcomes Mimosa
The Hôtel de la Marine, a listed monument located on Place de la Concorde, unveiled two new spaces in June 2021. Long before their opening, they were already making a name for themselves. On the one hand, Café Lapérouse, the second address of the cult restaurant on the Quai des Grands Augustins, with its chic brasserie-style seafood menu. On the other hand, Mimosa, a new restaurant led by Michelin-starred chef Jean-François Piège.
With his wife, Élodie Piège, he opened Clover in Saint-Germain-des-Prés, Paris, in 2014. Since then, the couple has developed new addresses and won additional stars. One can think of Le Grand Restaurant, Clover Grill, Clover Gordes, La Poule au Pot and Epi d’Or. Their main goal was to avoid recreating the same concept twice. The only certainty we have, however, is to enjoy gourmet, generous cuisine in a friendly atmosphere. At Mimosa, Jean-François Piège surrounded himself with Benjamin Patou, president of the Moma Group that runs the restaurant, and architect and interior designer Dorothée Delaye. The trio takes us to the south of France, on the shores of the Mediterranean Sea, where the silver wattle tree, also known as mimosa, grows its bright yellow flowers.
A new restaurant in the South of France
In warm Riviera-style interiors, we started out with the house specialty, the deviled eggs. This extremely simple traditional dish is revamped in a wide range of refined versions with bottarga, taramasalata, lobster, salmon with horseradish or caviar. An explosion of flavors to start your meal. Afterward, appetizers to share evoke summer lunches on the beach with light vegetable fritters, avocado shrimp mimosa, ham and tomato bread. The seasoned sea bream gravelax for two is to die for. As for the main dishes, seafood is obviously in the spotlight. We loved the rock octopus grilled over a wood fire with chickpea cream, the bluefin tuna steak and the catch of the day.
Finally, the meats are also worth a try. Lamb shoulders with spices and grilled eggplant, meatballs with cooked tomato and burrata, the excellent wood-fired beef fillets with an unexpectedly fresh herbaceous sauce. For desserts, Jean-François Piège continues to surprise us with delicious caramel cabbage fritters and a colourful pineapple. Ideal for a wholesome lunch with friends, Mimosa transforms after dark. At night, it becomes a festive place with dim lights. You can order cocktails inspired by the South of France or the famous Mimosa drink — Champagne and orange juice.
