A new wave of chefs with thoughtful sourcing, curated interiors, and a fresh take on traditional cuisine is bringing renewed prestige to this pillar of French gastronomy.<\/p><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><p data-start=\"732\" data-end=\"1014\">Take <strong>Brass<\/strong> in Saint-Germain-des-Pr\u00e9s, <strong>Cloche<\/strong> in the neighbourhood Les Halles, or <strong>Le<\/strong> <strong>Cornichon<\/strong> near Goncourt. Alongside legendary spots like Lipp, Caf\u00e9 de Flore and Les Deux Magots, a new address has opened. Located at the <strong>Mabillon crossroads<\/strong>, just steps from the Saint-Germain market, <strong>Brass<\/strong> goes big. The decor plays with a rich colour palette of burgundy and brown tones, while staying true to classic codes \u2014 mosaic flooring, coffered ceilings, plush banquettes, and onyx tables. There is a <strong>counter<\/strong> at the entrance to greet guests, and even a piano inside the main room. Hidden behind curtains, <strong>Brass<\/strong> also features a more intimate space designed for festive evenings.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><p data-start=\"1724\" data-end=\"2131\"><strong>Our favorite dish? <\/strong>The brasserie staples are all here. Starters include leeks in vinaigrette, bone marrow on grilled toast, classic oeuf mayo, and escargots. The Californian, now Paris-based chef is one of the key players shaking up the local bistronomy scene. After launching Le Saint Sebastien in 2018, he took over Vivant Deux in 2022. To mark his arrival, <strong>Cloche<\/strong> has undergone a subtle makeover &#8211; a new logo and elegant green tablecloths echo the restaurant\u2019s colour palette.<\/p><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><p data-start=\"537\" data-end=\"974\"><strong>Our favorite dish? <\/strong>Hard to choose, as every plate crafted by <strong>Robert Mendoza<\/strong> is worth trying. The chef revisits <strong>brasserie<\/strong> <strong>classics<\/strong> with finesse and style. Must-haves include the <strong>infamous oeuf mayo<\/strong>, a melting veal terrine, and ultra-crispy Caesar endives. Then, comes the <strong>juicy<\/strong> <strong>coquelet<\/strong>, the aged <strong>Black Angus<\/strong> hanger steak elevated with a three-pepper sauce.
