The subtle flavours surprise us and burst on the palate. The textures are strikingly original, elevating recipes one wishes to recreate at home.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">At the head of the kitchens since early 2020, chefs <strong>Joao DaSilva<\/strong> and <strong>Vincent Bessy<\/strong> \u2013 whose paths crossed at <strong>Clamato<\/strong>, the seafood restaurant of the Parisian institution <strong>Septime<\/strong> \u2013 combine experimentation with conviviality. Their refined plates feature both classic French dishes and surprising recipes from elsewhere. Guests can sample pressed oxtail reminiscent of a traditional <em>pot-au-feu<\/em>, shallot ravioli with kimchi \u2014 a traditional Korean dish made from fermented and spiced cabbage \u2014 as well
