At the Hotel La Réserve, Mohamed Cheikh creates a sweet-salty-spicy menu that’s a must-try.

The winner of this year’s season 12 of Top Chef, Mohamed Cheikh opened a short-lived restaurant in the wake of his victory. Manzili at jardin des Plantes in Paris, before taking over the brasserie at La Réserve hotel, La Pagode de Cos. Until December 4, he will be working with chef Jérôme Banctel, whose trainee he was at the start of his apprenticeship. In the sumptuous decor of this brasserie designed by Jacques Garcia, we discover a highly creative menu that brilliantly blends sweet and savory flavors, all sprinkled with spices and condiments. 

 

The taste experience begins with elaborate tapas like toasted brioches topped with beef tartare at mayonnaise with garlic confit and black truffle, or chickpea falafel with herbs, tahina sauce and pomegranate fruit. For starters, the sweetness of bluefin tuna is awakened by slices of beet, onion and pomegranate pickles, or fried cauliflower is enhanced by oil flavored with tandoori, tzatziki and roasted cashews. The tasting continues with incredible scallops a la plancha with yellow peaches, avocado guacamole with toasted sesame and kalamata olives, and a back of cod with a subtle taste of tea and seasonal vegetables. Finally, for a sweet touch, mango with rice and coconut milk or mille feuilles baklawa with crème diplomate, crushed pistachios and honey whipped cream will go perfectly with mint green tea and toasted pine nuts!
