At Mimosa, Jean-François Piège sublimates deviled eggs and much more…

For his new address, the famous Michelin-starred chef Jean-François Piège takes us to the south of France to enjoy the famous deviled eggs revisited by him, and discover a gourmet and sunny menu inspired by the specialties of the Mediterranean. 

At its inauguration in June 2021,  the Hôtel de la Marine, a listed monument located on Place de la Concorde, unveiled two new establishments which, long before their opening, were already making a name for themselves. On the one hand, the Café Lapérouse – the second address of the mythical restaurant on the Quai des Grands Augustins – with a chic brasserie-style menu dedicated to seafood. On the other, Mimosa, a new restaurant signed by Michelin-starred chef Jean-François Piège. Since he and his wife, Elodie Piège, opened Clover in 2014 in the Saint-Germain-des-Prés district, the couple has multiplied addresses and stars (Le Grand Restaurant, Clover Grill, Clover Gordes, The Chicken in the Pot and the Epi d’Or) with the desire to never offer the same concept twice. With Jean-François and Elodie Piège, the only certainty we have is to discover a gourmet and generous cuisine in a friendly atmosphere. For his new Mimosa address, Jean-François Piège, surrounded by Benjamin Patou, president of the Moma Group that runs the restaurant and Dorothée Delaye, the architect and interior designer, takes us to the south of France, on the shores of the Mediterranean, where this tree famous for its bright yellow flowers grows. 

 

In a warm Riviera-style décor, we start with the house specialty, deviled eggs naturally. This extremely simple heritage dish is revisited and offered in very refined versions with bottarga, taramasalata, lobster, salmon with horseradish or caviar. The whole thing stands out as an explosion of flavors. Afterwards, appetizers to share evoke summer lunches on the beach with light vegetable fritters, avocado shrimp mimosa, ham and tomato bread as well as an incredible beautifully seasoned sea bream gravelax for two. As for the dishes, seafood is obviously in the spotlight. In particular, a rock octopus grilled over a wood fire with chickpea cream, a bluefin tuna steak or the catch of the day. Finally, the meats are also worth a visit: shoulder of lamb with spices and grilled eggplant, meatball with cooked tomato and burrata or an excellent wood-fired beef fillet accompanied by an unexpectedly fresh herbaceous sauce. For desserts, Jean-François Piège continues to surprise with absolutely stunning caramel cabbage fritters or a surprise pineapple full of color and delight. Ideal for a hearty and tasty lunch with friends, Mimosa transforms after dark. Now a festive place with dim lights, you can order cocktails inspired by the south or the famous Mimosa (Champagne and orange juice) to accompany your dinner.
